Stuffed Green Peppers

6 medium green peppers

1/2 pound lean ground beef (90% lean)

1/2 pound ground sausage

1 cup onions, chopped

1 teaspoon chopped garlic

2 cans (10 ounces) tomato sauce

1/2 cup uncooked rice

1 teaspoons salt

1 teaspoon chili powder

1/2 teaspoon pepper

1 cup shredded cheddar cheese, divided



Cut tops off of green peppers and remove seeds; set aside

In a large saucepan, cook peppers in boiling water for 10 minutes

In a large skillet, cook ground beef, ground sausage, onion and garlic; drain.  Add chili powder, salt and pepper; mix well.  Stir in tomato sauce with rice and allow to simmer for 10 minutes.  Reduce heat and add half the cheese.  Cook till cheese is melted.

Fill peppers with mixture. Carefully place peppers in 9x13 baking dish and add remaining cheese.

Bake at 300 degrees for 20 minutes.

For a twist, use med-hot peppers!
