The BEST Zucchini Bread


4 Cups coarsely shredded zucchini (do not shred in blender)

2 Teaspoons ground cinnnamon

3 Cups flour

1-1/2 Teaspoons salt

2-1/2 Cups sugar

1-1/2 Teaspoon baking soda

1-1/4 Cup vegetable oil

1 Teaspoon ground cloves

4 eggs beaten

1/2 Teaspoon baking powder

1 Tablespoon plus 1 Teaspoon vanilla

1 Cup chopped nuts and/or chocolate chips


Pre-heat oven to 325⁰.  Generously grease bottoms only of 2 loaf pans.

Beat all ingredients on low speed, scraping bowl, constantly, 1 minute.

Beat on medium speed 1 minute.  Pour into pans.

Bake until wooden pick inserted in center comes out clean, about 1 hour.

Cool 10 minutes; remove from pans.  Cool completely before slicing.
